Tips: Keep your lettuce fresh for up to two weeks.
When I'm in a rush or want a mix of different greens, I often buy pre-washed, bagged lettuce, but my favorite is still whole heads of lettuce like Boston, leaf, butter or Romaine. I wash these lettuces as soon as I get them home, so they'll be ready to use when I want to make a salad.
Here's how to wash and store lettuce so it will keep fresh for up to two weeks:
• Remove the outer layer and any bruised leaves.
• Lightly separate the leaves at the core of the head. Cut the core out with a good paring knife and rinse the lettuce head thoroughly in a colander under cold water.
• Lightly shake off excess water; and allow the head of lettuce to dry as thoroughly as possible. You can use paper towels to speed this process up, blotting the leaves at the cutout core.
• Store the head of lettuce in a loose plastic bag in the crisper drawer of your fridge.

Toss spinich leaves with thinly sliced red onion strips, thinly sliced red cabbage strips, cored and sliced slices of 1 green apple, and slices from fresh avacado.
Spoon onto plates or in bowls and top with chicken strips if desired. Serve dressing on the side.
